Which pink sapphire engagement ring to select?

Ok, I hope you can help, I feel I am close to picking something out for my gorgeous girlfriend who is a freak for pink.

I always planned to use Blue Nile for my purchase and she did mention she liked the pink sapphire side sets with the diamond in the middle. But since then she has sent me a couple of links of rings she found nice or ok...I will post those two links here...as you can see she has switched to the gemstone as the focal point:

Now I also looked around and found this one...but I am not sure if it is pink enough, I like the style of it...but it may be a bit too purple (I am an LSU fan so that doesn't bother me), but I know she would be excited either way, but just wanted to show this one as well:

The only thing is that I am not sure about the reputation of the site the rings are on...I went on Blue Nile and tried to find something similar, but the gemstone centered rings are very small and not what I am looking for. I am trying to stay at a maximum of $5,000 and am not against a round or princess cut diamond in the middle with some pink sapphires on the side or the sapphire in the middle with the diamonds on the side. The upside with the pink in the middle is that I would be able to afford a bigger stone than a similarly sized diamond.

Just a small amount of background on my gf...obviously she likes pink...she is about 5'5" 125 lbs, very beautiful, i believe she wears a 6 or 6.5 ring size. Long brown hair and green eyes. If there is any there is any other info that may help just ask.
