I also love celtic jewelry...when my husband proposed it was with a beautiful sterling silver celtic knotwork ring with an emerald in the center...gorgeous! Unfortunately all he told me was that it was straight from ireland, and that he ordered it online..my husband happens to be irish, so I retaliated and bought him a replica watch with silver knotwork in the band, as an engagement gift..haha..he loves it!

That being said, you could always work with a jeweler who specializes in custom pieces, to make exactly what you want. You could buy the stone, and draw a picture for him of the ring setting that you like. You can make the ring to your exact specifications.....the downside being that this route will probably cost twice as much....
